1 1/2 lb. lean ground beef
3 cup broccoli, chopped
2 cans (4 oz.) mushroom pieces or 1 cup fresh chopped mushrooms
1/2 cup celery, chopped
1 cup carrots, sliced
1/4 cup green pepper, chopped
4 cups V-8 juice or tomato juice
1/2 cup water
1/4 to 1/2 tsp. salt
1/4 tsp. pepper
1/4 tsp. thyme
1/4 tsp. oregano
Brown beef; drain off fat. Add vegetables, tomato juice, water, and seasonings. Place in slow cooker; cover and cook on LOW for 8 to 9 hours.
